A fresh walnut smells mildly nutty, or of almost nothing, and the kernel fills the shell. It snaps cleanly and tastes sweet-nutty with a slight bitterness from the skin. A walnut that smells of oil paint and tastes sharply bitter has gone rancid, and cooking will not fix it.
For kernels, colour is the grade: extra light, light, light amber and amber, from mildest to strongest. Paler kernels usually come from nuts that were dried and handled well after harvest, which is why they cost more. Our guide to Kashmiri walnuts covers grades, freshness and storage in more detail.
Buy them in the shell if you eat a few a day or want them to keep for months: the shell protects the kernel from air and light. Buy kernels for baking, breakfast bowls and cooking, where cracking shells by the handful is a chore, and keep an opened pack in the fridge.
Kernels are graded by colour. Extra light is the palest and mildest grade, with the least bitterness from the papery skin. Light, light amber and amber are progressively darker and stronger in taste.
Akhrot in Hindi and Urdu, doon in Kashmiri. Thin-shelled walnuts that crack in your hand are sold as kagzi, from the word for paper.
From September into October. The green husks split, the nuts are gathered and dried, then sold in the shell or cracked and graded into kernels, so autumn is when new-crop walnuts reach the market.
Roughly half the weight is shell, though it varies from nut to nut. As a rule of thumb, an 800g pack of walnuts in shell gives a little under half that weight in kernels.
Orders usually leave Srinagar within 1–2 business days and arrive 3–7 business days after that. Delivery is ₹59, or free on orders of ₹1,000 or more.
